Descripción Introduction: knowledge about foods and nutrients is essential because they understand the importance of a healthy and balanced diet for one's own well-being. In addition to recognizing the benefits that these nutrients provide to the body and thus knowing how to balance them. Objective: To characterize the level of knowledge about food and nutrients in university students of medical sciences at the Universidad Panamericana de Guatemala. Method: A descriptive cross-sectional study was conducted. The universe consisted of 309 university students from the Faculty of Medicine and Health. The variables level of knowledge in foods and nutrients, and about types of fish, not recommended fats, transgenic and whole foods, fiber and vitamins were studied. Results: It can be observed that the level of knowledge in food and nutrients of the people, of which 37.2% have a high level of knowledge, 15.9% have a low level of knowledge and 46.9% have a medium level of knowledge, which was the most frequent. There was a higher proportion of correct answers in the questions about non-recommended fats (75.4%). The most deficient results were in knowledge of vitamins where only 16.5% answered correctly. Conclusions: The level of knowledge about food and nutrients of medical science students at the Universidad Panamericana de Guatemala was characterized, where the middle level predominated. It is recommended to implement educational strategies to reinforce knowledge of food and nutrition.
Descripción Introducción: los conocimientos sobre alimentos y nutrientes son fundamentales pues comprenden la importancia de una alimentación saludable y equilibrada para el propio bienestar. Además de reconocer los beneficios que proporcionan esos nutrientes al organismo y así saber equilibrarlos. Objetivo: caracterizar el nivel de conocimientos sobre alimentos y nutrientes en estudiantes universitarios de ciencias médicas de la Universidad Panamericana de Guatemala. Método: se realizó un estudio descriptivo de corte trasversal. El universo estuvo constituido por 309 estudiantes universitarios de la Facultad de Medicina y de la Salud. Se estudiaron las variables nivel de conocimientos en alimentos y nutrientes, y sobre tipos de pescados, grasas no recomendadas, alimentos transgénicos e integrales, fibra y vitaminas. Resultados: se puede observar que el nivel de conocimientos en alimentos y nutrientes de las personas de las cuales el 37,2% tienen un nivel de conocimientos alto, el 15,9% tienen un nivel de conocimientos bajo y el 46,9% tienen un nivel de conocimientos medio, el cual fue el de mayor frecuencia. Hubo mayor proporción de respuestas correctas en las preguntas sobre grasas no recomendadas (75,4%). Los resultados más deficientes fueron en los conocimientos de vitaminas donde solo el 16,5% respondió de forma correcta. Conclusiones: se caracterizó el nivel de conocimientos sobre alimentos y nutrientes de los estudiantes de ciencias médicas de la Universidad Panamericana de Guatemala, donde predominó el nivel medio. Se recomienda implementar estrategias educativas para reforzar los conocimientos de la alimentación y la nutrición.
